Paneer Bhurji
Ingredients:
- Paneer (cottage cheese), crumbled: 200g
- Onion, chopped: 1 medium
- Tomato, chopped: 1 medium
- Green chili, chopped: 1
- Ginger-garlic paste: 1 tsp
- Turmeric powder: ¼ tsp
- Red chili powder: ½ tsp
- Garam masala: ½ tsp
- Cumin seeds: ½ tsp
- Oil or ghee: 1 tbsp
- Fresh coriander, chopped: 2 tbsp
- Salt: to taste
Instructions:
- Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
- Add onions and sauté until golden.
- Add ginger-garlic paste and green chili; cook for 1 minute.
- Stir in tomatoes, turmeric, red chili powder, and garam masala. Cook until tomatoes are soft.
- Add crumbled paneer and mix well. Cook for 3-4 minutes.
- Garnish with coriander and serve hot.
Zucchini Upma
Ingredients:
- Zucchini, grated: 1 medium
- Mustard seeds: ½ tsp
- Curry leaves: 5-6
- Green chili, chopped: 1
- Ginger, grated: 1 tsp
- Onion, chopped: 1 small
- Coconut flour: 2 tbsp
- Ghee: 1 tbsp
- Salt: to taste
- Fresh coriander, chopped: 2 tbsp
Instructions:
- Heat ghee in a pan. Add mustard seeds and let them splutter.
- Add curry leaves, green chili, ginger, and onions. Sauté until onions are translucent.
- Stir in grated zucchini and cook for 3-4 minutes.
- Add coconut flour, salt, and mix well. Cook for another 2-3 minutes until the mixture thickens.
- Garnish with fresh coriander and serve warm.
Palak Chicken
Ingredients:
- Spinach (palak), blanched and pureed: 200g
- Chicken breast, diced: 300g
- Onion, chopped: 1 medium
- Tomato, chopped: 1 medium
- Green chili: 1
- Ginger-garlic paste: 1 tsp
- Turmeric powder: ¼ tsp
- Cumin powder: ½ tsp
- Coriander powder: ½ tsp
- Cream: 2 tbsp
- Ghee: 2 tbsp
- Salt: to taste
Instructions:
- Heat ghee in a pan and sauté onions until golden.
- Add ginger-garlic paste and green chili; cook for 1 minute.
- Add diced chicken, turmeric, cumin, and coriander powder. Cook until chicken is no longer pink.
- Add tomatoes and cook until soft.
- Stir in spinach puree, mix well, and cook for 5 minutes.
- Add cream, mix, and simmer for 2 minutes. Serve hot with a low-carb flatbread or as is.
Eggplant (Baingan) Pizza Bites
Ingredients:
- Eggplant, sliced into ½-inch rounds: 1 large
- Olive oil: 2 tbsp
- Garlic, minced: 1 tsp
- Pizza sauce (sugar-free): 2 tbsp
- Mozzarella cheese, shredded: 100g
- Italian seasoning: 1 tsp
- Salt: to taste
Instructions:
- Preheat the oven to 180°C (350°F).
- Brush eggplant slices with olive oil and sprinkle with salt.
- Arrange on a baking tray and bake for 10 minutes.
- Remove from the oven, spread a thin layer of pizza sauce on each slice, and sprinkle with garlic, cheese, and Italian seasoning.
- Bake again for 5-7 minutes or until cheese is melted.
- Serve as a low-carb snack or appetizer.
