Paneer Bhurji

Ingredients:

  • Paneer (cottage cheese), crumbled: 200g
  • Onion, chopped: 1 medium
  • Tomato, chopped: 1 medium
  • Green chili, chopped: 1
  • Ginger-garlic paste: 1 tsp
  • Turmeric powder: ¼ tsp
  • Red chili powder: ½ tsp
  • Garam masala: ½ tsp
  • Cumin seeds: ½ tsp
  • Oil or ghee: 1 tbsp
  • Fresh coriander, chopped: 2 tbsp
  • Salt: to taste

Instructions:

  1. Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
  2. Add onions and sauté until golden.
  3. Add ginger-garlic paste and green chili; cook for 1 minute.
  4. Stir in tomatoes, turmeric, red chili powder, and garam masala. Cook until tomatoes are soft.
  5. Add crumbled paneer and mix well. Cook for 3-4 minutes.
  6. Garnish with coriander and serve hot.

Zucchini Upma

Ingredients:

  • Zucchini, grated: 1 medium
  • Mustard seeds: ½ tsp
  • Curry leaves: 5-6
  • Green chili, chopped: 1
  • Ginger, grated: 1 tsp
  • Onion, chopped: 1 small
  • Coconut flour: 2 tbsp
  • Ghee: 1 tbsp
  • Salt: to taste
  • Fresh coriander, chopped: 2 tbsp

Instructions:

  1. Heat ghee in a pan. Add mustard seeds and let them splutter.
  2. Add curry leaves, green chili, ginger, and onions. Sauté until onions are translucent.
  3. Stir in grated zucchini and cook for 3-4 minutes.
  4. Add coconut flour, salt, and mix well. Cook for another 2-3 minutes until the mixture thickens.
  5. Garnish with fresh coriander and serve warm.

Palak Chicken

Ingredients:

  • Spinach (palak), blanched and pureed: 200g
  • Chicken breast, diced: 300g
  • Onion, chopped: 1 medium
  • Tomato, chopped: 1 medium
  • Green chili: 1
  • Ginger-garlic paste: 1 tsp
  • Turmeric powder: ¼ tsp
  • Cumin powder: ½ tsp
  • Coriander powder: ½ tsp
  • Cream: 2 tbsp
  • Ghee: 2 tbsp
  • Salt: to taste

Instructions:

  1. Heat ghee in a pan and sauté onions until golden.
  2. Add ginger-garlic paste and green chili; cook for 1 minute.
  3. Add diced chicken, turmeric, cumin, and coriander powder. Cook until chicken is no longer pink.
  4. Add tomatoes and cook until soft.
  5. Stir in spinach puree, mix well, and cook for 5 minutes.
  6. Add cream, mix, and simmer for 2 minutes. Serve hot with a low-carb flatbread or as is.

Eggplant (Baingan) Pizza Bites

Ingredients:

  • Eggplant, sliced into ½-inch rounds: 1 large
  • Olive oil: 2 tbsp
  • Garlic, minced: 1 tsp
  • Pizza sauce (sugar-free): 2 tbsp
  • Mozzarella cheese, shredded: 100g
  • Italian seasoning: 1 tsp
  • Salt: to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Brush eggplant slices with olive oil and sprinkle with salt.
  3. Arrange on a baking tray and bake for 10 minutes.
  4. Remove from the oven, spread a thin layer of pizza sauce on each slice, and sprinkle with garlic, cheese, and Italian seasoning.
  5. Bake again for 5-7 minutes or until cheese is melted.
  6. Serve as a low-carb snack or appetizer.
